Caramel Apple Cookie Pizza

CARAMEL APPLE COOKIE PIZZA
I just had my blog anniversary. 17 years old! Holy cow. It’s crazy that I’ve been doing anything for that long. As a celebration I’ve been sharing a few recipes from my cookbook Scrumptious.
WHY I LOVE THIS
The flavors of this just go together. The tart apples with the sweet caramel and a soft cookie bar with crisp edges. The cream cheese frosting is just enough to make it feel decadent but not over the top.
HOW TO MAKE THIS

Preheat oven to 350 degrees F. Line a 9×13-inch baking dish with parchment paper.

In a large bowl, beat butter and sugar until light and fluffy. Add egg and vanilla. Mix until combined.

In a small bowl, whisk together flour, baking powder, and salt. Slowly add flour mixture to wet mixture until combined.

Press into prepared baking dish. Bake for 12 to 14 minutes or until edges just start to brown. Let cool.

While dough cooks, prepare cream cheese frosting. In a large bowl, beat cream cheese and butter until fluffy. Add powdered sugar, vanilla, and milk or cream. Mix slowly at first, then increase speed until light and fluffy.

Spread frosting on cooled crust.
Sprinkle with apples and pecans.
Drizzle with caramel. Cut into squares to serve.
HOW TO KEEP APPLES FROM TURNING BROWN
There are a few different methods to keep your apples from browning.
- Lemon juice – this slows down the browning process if you squeeze some lemon juice over them.
- Salt – this works the best. Add you sliced or chopped apples to a bowl of cold water and add a 1/2 teaspoon of salt per cup of water. Let the apples sit for 5 minutes then drain and rinse them in a colander. Dry the apples and they are good to go!

Ingredients
SUGAR COOKIE DOUGH:
- 3/4 cup unsalted butter, softened
- 3/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Cream Cheese Frosting
CREAM CHEESE FROSTING:
- 4 ounces cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/2 teaspoon vanilla extract
- 1 to 2 tablespoons milk or heavy cream
TOPPINGS:
- 1-2 cups finely cubed Granny Smith apple, (see note to prevent browning)
- 1/2 cup chopped pecans
- 1/2 cup caramel sauce, (I like Mrs. Richardson brand)

LOL, not quite a full month later, my other son, who turned 30 today, has ALSO, chosen this as his birthday “cake” of choice this year!! 💚💙
