BLUEBERRY BREAKFAST BAKE
This recipe is from my first cookbook. It’s a sweet breakfast recipe that could double as dessert.
INGREDIENTS
- CANNED BISCUITS – I use Pillsbury biscuits.
- BLUEBERRIES – I prefer fresh but you could use frozen blueberries as well. We do add a little sugar to these because they’re very tart.
- QUICK OATS – Old fashioned oats won’t cook all the way so quick oats are the answer here.
- BROWN SUGAR – Adds some sweetness to the savory biscuits.
- CINNAMON
- MELTED BUTTER – Helps cook the oats and helps the cinnamon sugar stick on the biscuits.

HOW TO MAKE THIS BLUEBERRY BISCUIT BAKE
- Preheat oven to 350℉ and grease a 9″ baking dish.
In a small bowl, stir together the brown sugar and cinnamon.
Dip each biscuit quarter in the melted butter, then in the brown sugar mixture.
Place in a single layer on the bottom of the baking dish with all the pieces.
- Add 1/2 cup of oats on top of the biscuit pieces.

- Toss the blueberries with the granulated sugar. Add half the blueberries on top of the oats.
Repeat with the remaining 1/2 cup of oats and remaining blueberries.
Drizzle any leftover butter on top.
- Bake for 30-40 minutes or until biscuits are cooked through and golden brown. Serve warm.

- 1 cup quick oats
- 1½ fresh blueberries
- 1/4 cup granulated sugar
