GOOEY CHEX MIX
I actually have a version of this in my old cookbook from 2014. This version is a little improved and definitely hard to stop eating.
WHAT I LOVE ABOUT THIS RECIPE
- It’s fast to make. You can have a batch ready in 20 minutes start to finish.
- Everyone loves it. It’s definitely a crowd pleaser.

INGREDIENTS IN GOOEY CHEX MIX
- Rice or Corn Chex mix – you can do a mix or use all of one cereal.
- Golden Grahams
- Shredded coconut – I like to chop it up in the food processor so the texture is finer.
- Sliced almonds – you can leave these out but trust me they’re good.
- Butter
- Sugar
- Corn syrup
- Vanilla
- Baking soda

Gooey Chex Mix
Ingredients
- 6 cups Chex cereal (Rice or Corn Chex)
- 6 cups Golden Grahams cereal
- 1 1/2 cups shredded sweetened coconut , (chopped - see note)
- 1 1/4 cup sliced almonds
- 1 cup butter
- 1 cup white sugar
- 1 cup light corn syrup
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
Instructions
- Line a baking sheet with parchment paper and spray with cooking spray.
- In a very large bowl, add the Chex and Grahams cereal, coconut, and almonds and stir together.
- Microwave version: In a large microwave safe bowl, add the butter, sugar, and corn syrup. Microwave for 5 minutes stirring halfway. Remove and stir well. Microwave for 2 more minutes. Remove from heat and add the vanilla and baking soda.Stovetop version: In a large saucepan, bring the butter, sugar, and corn syrup to a boil then start the timer and cook for 4 1/2 minutes at a boil. Remove from the heat and stir in the baking soda and vanilla.
- Immediately pour the sugar mixture over the cereal mixture and stir until very well combined. Spread onto the prepared baking dish and let cool. Break into pieces and enjoy.


This is one of my favorite Christmas treats. We would get this as kids from a friend. I finally made it today. I couldn’t find slivered Almonds. So I used salted mix nuts and it was amazing.

I made this for a 4th of July party not realizing it would be so gooey. It was an hot humid day and if I put it in a big bowl it would have turned into one giant clump. Instead I portioned it into snack size zip lock bags and put all the bags into a red, white and blue basket. It was a big hit! There were a few bags left after the fireworks but not for long. People grabbed the perfect takeout bags on their way out. Another great recipe from you. Thanks!

Is there another syrup you could use instead of corn syrup? Would honey work as well?
I haven’t tried honey but I don’t see why not

i have holiday baking burn out honestly. i have made so many cookies for so many years and i am just needing a break so i can be more present this year! enter- snack mix. i tested this today (aka wanted to make it for myself) and let me just say, no one will miss the cookies. so unique and delicious, and best of all simple! i like your style lady!

Just right. This is a crowd pleaser every time! I like this recipe because it measures the ingredients in cups instead of ounces. If you double it, like I do, it uses a whole box of golden grahams and a whole box of Chex cereal.

I love this recipe, the only thing I changed was substituted the Golden Grahams for Cinnamon Toast Crunch. It was delicious, definitely making this again and again!
