This Blueberry Cobbler recipe is warm, bubbly, sweet goodness with nostalgic flavor from simple ingredients. This homemade dessert is versatile and can be used with almost any fruit.
Preheat oven to 350℉ and grease a 9" baking dish (it can be square or round). Melt butter in the pan in the oven as it's preheating or in the microwave then pour it in the bottom of the pan.
In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Stir in the milk, vanilla, and lemon zest if using. Pour cobbler batter on top of melted butter.
Sprinkle the blueberries on top of the batter. Add a little sugar on top of the blueberries if desired (a coarse sugar here adds a nice crunch). Bake in a preheated oven for 40-50 minutes or until golden brown. Let cobbler cool slightly before serving. Serve with vanilla ice cream or whipped cream. Store leftover cobbler in the refrigerator.

You can use less sugar in the blueberry filling if your blueberries are really sweet.
