Instructions
In a large bowl, add the powdered sugar, peanut butter, butter, and vanilla. Mix slowly at first with a mixer, increase the speed, and mix until well combined.
Roll dough into balls, around 2 teaspoons, and place on a parchment lined baking sheet.
Freeze balls for at least 30 minutes to firm up.
When ready to dip, melt chocolate chips and coconut oil in a microwave safe bowl in 30 seconds intervals, stirring in between until smooth.
Insert a toothpick into each ball, and dip in the chocolate without completely covering the top so that it looks like a buckeye. Place on the parchment to set. Remove the toothpick.
Chill in the fridge for about 30 minutes to set. Store in the fridge until serving.
Notes
This is a very sweet treat which is why I use salted butter. If using unsalted butter, add 1/4 teaspoon of salt to the dough.
