Cut spaghetti squash lengthwise with a sharp knife and scrape out seeds. Pierce with a fork. Drizzle with the olive oil to lightly coat. Sprinkle with salt, pepper, Italian seasonings and garlic salt (if desired) to your personal liking.
Place cut side down on a baking sheet. Bake for 35-50 minutes or until fork tender. Cooking time will depend on the size of your squash. You don't want it to be crunchy or soggy when you scrape it out. Al dente is the best texture. Once cooked, let cool for a couple minutes then scraped out the squash with a fork. Serve with spaghetti sauce or your desired topping.
