CAPRESE SALAD RECIPE
My neighbor came over with some juicy tomatoes from her garden. They had so much flavor. I made a quick Caprese salad and thought I should post it here even though it’s a very simple recipe.
It’s a favorite summer salad but really you eat it year round.

SIMPLE INGREDIENTS
- FRESH MOZZARELLA CHEESE – This can be found usually in the deli section of your grocery store. Fresh mozzarella balls are usually stored in a brine and are used in traditional caprese salad.
- FRESH TOMATOES – Roma or Heirloom tomatoes are a great option.
- FRESH BASIL
- BALSAMIC GLAZE – This is a reduced version of balsamic vinegar.
When arranging the slices of tomatoes and mozzarella on the serving platter just alternate them in a single layer.
Then I tuck the basil leaves in between the tomatoes and mozzarella slices. Drizzle with a good olive oil, a sprinkle of salt and black pepper, and balsamic glaze.
VARIATION

This is non-traditional version with grape tomatoes or halved cherry tomatoes sliced in half and mozzarella balls (Ciliegine mozzarella). Either one is a great option.
