CAPRESE SALAD RECIPE

My neighbor came over with some juicy tomatoes from her garden. They had so much flavor. I made a quick Caprese salad and thought I should post it here even though it’s a very simple recipe.

It’s a favorite summer salad but really you eat it year round.

SIMPLE INGREDIENTS

  • FRESH MOZZARELLA CHEESE – This can be found usually in the deli section of your grocery store. Fresh mozzarella balls are usually stored in a brine and are used in traditional caprese salad.
  • FRESH TOMATOES – Roma or Heirloom tomatoes are a great option.
  • FRESH BASIL
  • BALSAMIC GLAZE – This is a reduced version of balsamic vinegar.

When arranging the slices of tomatoes and mozzarella on the serving platter just alternate them in a single layer.

Then I tuck the basil leaves in between the tomatoes and mozzarella slices. Drizzle with a good olive oil, a sprinkle of salt and black pepper, and balsamic glaze.

VARIATION

Caprese Salad

This is non-traditional version with grape tomatoes or halved cherry tomatoes sliced in half and mozzarella balls (Ciliegine mozzarella). Either one is a great option.

Servings: 6 servings

Ingredients
  

  • 8 ounces fresh mozzarella, sliced into 1/4 inch slices
  • 8 ounces ripe tomatoes, sliced into 1/4 inch slices
  • fresh basil leaves
  • salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic glaze

Instructions
 

  • On a large plate, alternate mozzarella and tomato slices slightly overlapping. Tuck a basil leaf in between each tomato and mozzarella.
  • Right before serving, sprinkle with salt and pepper. Drizzle with the olive oil and balsamic glaze.

Notes

You can also make a non-traditional version of caprese salad with cherry tomatoes sliced in half and mozzarella balls (Ciliegine mozzarella). The amount of ingredients will be the same.
