Cucumber Tomato Feta Salad

TOMATO FETA SALAD
Every time I indulge in a ton of treats I always crave a healthy salad the next day. This is my go to quick salad to go with any dinner.

INGREDIENTS:
- ENGLISH CUCUMBER – These cucumbers are long and skinny compared to regular cucumbers. The seeds are smaller. I like to mostly peel these but leave a little skin on for color.
- GRAPE TOMATOES – I love the firmness of cherry tomatoes in this salad as compared to Roma tomatoes. You could also use cherry tomatoes.
- RED ONION
- PARSLEY
- GARLIC

- FETA – I like to use block feta because I feel like it’s more moist but you could also use crumbled feta.

Cucumber Tomato Feta Salad
Ingredients
- 1 English cucumber, diced, I like to slightly peel them but leave some skin on for color
- 3 cups grape tomatoes, halved
- 8 oz block of feta, diced
- ¼ cup red onion, diced
- ¼ cup parsley, chopped
- ¼ cup olive oil
- 2 tablespoons red wine vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ½ teaspoon ground pepper
Instructions
- In a large bowl, add the cucumbers, tomatoes, feta, red onion, and parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, garlic, oregano, salt, and pepper.
- Pour the dressing over the salad ingredients and toss to coat. Best served the same day.



I served this alongside lamb kabobs and white rice and it was so so good – even better the next day!
