Cucumber Tomato Feta Salad
is refreshing and a great side dish to chicken, fish, or steak.

Ingredients

English cucumber, diced
,
I like to slightly peel them but leave some skin on for color

grape tomatoes, halved

block of feta, diced

cup
red onion, diced
¼
cup
parsley, chopped
¼
cup
olive oil

tablespoons
red wine vinegar
2
cloves
garlic, minced
1
teaspoon
dried oregano
½
teaspoon
salt
½
teaspoon
ground pepper
Instructions
In a large bowl, add the cucumbers, tomatoes, feta, red onion, and parsley.
In a small bowl, whisk together the olive oil, red wine vinegar, garlic, oregano, salt, and pepper.
Pour the dressing over the salad ingredients and toss to coat. Best served the same day.
